盲测在食品研发过程中的应用进展
摘要:通过近
16 年不断在食品研发过程中运用盲测,科学地实现食品研发系统化、规范化、
节约化、制度化,在应用过程中不断发现问题、解决问题,于
2010 年在第十四届中国国际食
品添加剂和配料展览会
FIC “复合调味食品精品研发及措施”专题中探讨盲测的应用,又于
2010 年 CFE 专题“浓缩鸡汁(酱、膏)调味技巧及盲测”对盲测进行深度探讨,2011 年又将
盲测在各个食品研发过程中的应用进行总结。本文阐述了盲测的作用、盲测的研发基础、盲测
的结果分析、展望四部分,重点是对清香型鸡精的正交试验方法值得其他食品研发作借鉴,
如麻辣花生、山椒凤爪、鸡粉、浓缩鸡汁、鸡肉膏、肉宝王香料、香辣金针菇、香辣蚕豆、鸭脖子、
棒棒鸡、火锅底料、麻辣牛板筋、其他香型鸡精等研发有非常重要的实践意义。

The Application and Progress of Blind Test in Food R&D
Abstract: We used the blind test in food R&D in recent 16 years, Scientifically achieved
systematic, standardized, intensive and systematic in food R&D, found and solve the problem in
the process of application. discussed the application of blind test in FIC2010
“complex flavor of food boutique R&D measures and countermeasures ”, and deeper discussed
the
blind
test
in
CFE2010
“
the seasoned skills
& blind test of concentrated chicken(sauce, paste)”
and summarized the application of blind
test in various food R&D process in 2011. This paper described the function, R&D, result analysis
and prospect of blind test, focal point is the study on orthogonal testing method of fresh chicken
essence seasoning, which is worth for reference by other food R&D, such as spicy peanuts,
mountain pepper chicken, chicken powder, concentrated chicken, chicken cream flavor spices,
meat rich flavor, spicy mushroom, spicy beans, stewed duck neck, bang bang chicken, spicy hot
pot, beef ribs, other flavor chicken essence seasoning is very important.

盲测是目前在食品研发中诞生一个产品年销售产值数亿的最佳手段,事实证明盲测在食
品研发过程中的作用远远高于
300 个业务员在不经过盲测的销售一般食品的功效。通过多年
实践证实:盲测是最科学、公正、合理的测试消费者真正需求的最佳手段。
